Dad's Famous Pancakes: A Saturday Morning Tradition the Kids Can Help Make
Some of the happiest mornings I know start with a sleepy kid in pajamas, a dad in an apron, and the sound of a whisk going around a big bowl. Saturday pancakes are not fancy. That is exactly why they work.
Charlotte fall Saturdays are made for this - cool enough for the kitchen to feel cozy, sunny enough to eat on the porch afterward. So here is my easy, no-fail pancake recipe for dads (and anyone else holding the spatula), with the jobs the kids can do at every step. Make it once and I promise someone will ask for it again next Saturday.
What You Need
Dry: 1 1/2 cups all-purpose flour, 1 tablespoon sugar, 3 1/2 teaspoons baking powder, 1/4 teaspoon salt.
Wet: 1 1/4 cups milk, 1 egg, 3 tablespoons melted butter (plus a little more for the pan), and a splash of vanilla if you like.
Fun stuff: blueberries, banana slices, chocolate chips, sprinkles, and a squeeze bottle or zip-top bag for making shapes.
This makes about 10 to 12 medium pancakes - plenty for a family of four with a couple left over for a second round.

Let's Make Them
1. Mix the dry. Put the flour, sugar, baking powder and salt in a big bowl and stir.
Kids can do this part: measuring and dumping. Let them level each cup with a butter knife - flour on the counter is part of the fun.
2. Mix the wet. In a second bowl, whisk the milk, egg, melted butter and vanilla.
Kids can do this part: cracking the egg. Crack it into a small cup first so any shell can be fished out before it goes in.
3. Bring them together. Pour the wet into the dry and stir gently, just until there are no big dry spots. Lumps are fine. Lumps are your friends - overmixing is what makes pancakes tough.
Kids can do this part: the stirring, with a big spoon and a countdown from 20.
4. Let it rest. Give the batter 5 minutes while the pan heats on medium. This is a great time for the kids to set the table and pick the toppings.

5. Pour and watch for bubbles. Butter the pan and pour about 1/4 cup of batter for each pancake. When little bubbles pop on top and the edges look dry (about 2 minutes), it is time to flip.
Grown-ups do this part: the hot pan and the flip. Kids are the official bubble spotters - they call "FLIP!" and Dad does the honors.
6. Flip and finish. Cook the second side about 1 more minute, until golden. Keep finished pancakes warm on a plate under a clean towel.
Make It Special
Make pancake art. Spoon some batter into a zip-top bag, snip a tiny corner, and draw letters, hearts, or a smiley face right in the pan. Kids' initials are always a hit, and nobody minds if the "B" comes out backwards.
Build a topping bar. Put the berries, bananas and chips in little bowls and let everyone decorate their own stack. Blueberry eyes and a banana smile turn a plain pancake into a breakfast buddy.
Give it a name. Every family tradition deserves one. "Dad's Famous Pancakes," "Saturday Stacks," "Flapjack Friday on a Saturday" - let the kids vote.

Take it outside. On a sunny Charlotte morning, carry the plates out to the porch, the patio, or a blanket in the backyard. Pancakes taste better in the sunshine. That is just science.
If the Kids Catch the Cooking Bug
If your little chef falls in love with the kitchen, Flour Power Cooking Studios at Rea Farms in south Charlotte runs cooking classes made just for kids, from preschoolers (with a grown-up along) to drop-off classes for little chefs, tweens and teens. They also host a Friday "Kids Night Out," which might be the perfect excuse for Dad to plan a date night. Check their calendar for this season's classes before you go.

The Best Part
The pancakes will disappear in about four minutes. What sticks around is the together part - the flour on little noses, the giggling over a backwards "B", the kid who proudly tells Grandma, "I cracked the egg!" Pull out the big bowl this Saturday and start a tradition.
